Tiramisu Cupcakes

The perfect marriage of tiramisu and cupcakes!! These cupcakes are absolutely delicious and the perfect treat or dessert for Tiramisu fans (and probably everyone else too!) YUM

 

CUPCAKES

160 g   cake flour

50 g     almond flour

2.5 ml  bicarbonate of soda

1 ml     baking powder

            Pinch of salt

80 g     butter

120 g   castor sugar

2          eggs and 1 egg yolk

125 g   soured cream

30 ml   sunflower oil or canola oil

5 m      vanilla

20 ml   very strong espresso

 

MASCARPONE BUTTERCREAM

160 g   butter

100 g   mascarpone

350 g   sifted icing sugar

            Vanilla seeds to taste

45 ml   Amaretto OR strong espresso

            Cocoa powder for dusting

 

  • Preheat the oven to 160°C and line a cupcake pan with papers
  • Sift together the flour, almond flour, bicarb,baking powder and the salt
  • Cream the butter and castor sugar together until light and fluffy and add the eggs gradually whilst beating well until incorporated
  • Add the flour, soured cream, oiland vanilla to the butter mixture and mix gently to make the batter.
  • Spoon ½ of the batter into another bowl and add the coffee.Mix gently to combine
  • Alternate by adding a bit of each batter into the cupcake papers, swirling with a toothpick to marble
  • Bake for about 20 minutes until cooked and cool completely on a cooling rack
  • TO MAKE THE MASCARPONE BUTTERCREAM:Beat the butter for a few minutes on high speed then add the mascarpone, beat together then add the sifted icing sugar gradually.  Add the vanilla and Amaretto and beat until light and fluffy
  • Spoon into a piping bag with a round 1cm nozzle and pipe the buttercream on the cupcakes
  • Dust with cacao powder
