Sicilian Almond and Orange Cookies

A little taste of Sicily for the holidays! These festive cookies are made with ground almonds and infused with the cozy, classic flavors of amaretti and orange. 🍊 Perfectly chewy, delicately sweet, and oh-so-yum! 🥰

(Makes ±24 cookies)

 

2          egg whites

5 ml     lemon juice

200g    icing sugar,

200g    ground almonds,

1          vanilla pod, seeds scraped out

zest of 1 orange

5 ml     almond extract/essence OR use 15 ml Amaretti/Almond liqueur

24        blanched almonds

extra sifted icing sugar for rolling

 

  • Sieve together the icing sugar and ground almonds.Mix in the vanilla seeds and orange zest
  • Whip the egg whites and lemon juice until stiff
  • Fold the dry ingredients and the almond extract OR Amaretti into the whipped egg whites to make the dough.Work gently
  • Cover and place in the fridge for 1 hour or longer
  • Preheat the oven to 170°C and line a large baking sheet with baking paper
  • Scoop outteaspoons of the dough (±20 g) and roll gently into small balls or ovals.
  • Roll in the extra sifted icing sugar and place on the baking sheet.Insert a blanched almond in the middle of each cookie.  Return to the fridge for 15 minutes.
  • Bake for ±13 minutes
  • Cool on a cooling rack and store in an airtight container
