Roasted Cauliflower, Feta And Herb Fritters

These Roasted Cauliflower, Feta, and Herb Fritters are a delightful Mediterranean-inspired dish combining the earthy flavor of roasted cauliflower with the richness of feta cheese and the freshness of herbs. Perfect as a vegetarian appetizer or side dish.

  • 1 Cauliflower
  • 30ml olive oil
  • Just a pinch Cayenne pepper
  • 2.5ml paprika
  • 3 eggs
  • 60ml Spring Onions
  • 100g Self-Raising Flour
  • 15ml mint leaves
  • 15ml Chopped fresh coriander
  • 160g Feta
  • Sunflower Oil

  • Preheat the oven to 200°C.
  • Mix the cauliflower florets with the olive oil, cayenne pepper, paprika and some salt and place into a roasting tray. Roast in the oven for about 20 minutes until lightly charred. Cool.
  • Combine all the ingredients to make the batter.
  • Heat some oil in a large non-stick frying pan and drop tablespoons of batter into the pan.
  • Cook for about 3-4 minutes on each side until the fritters are golden and crisp.
  • Drain on paper towel and serve warm with homemade tomato and jalapeno chilli jam and more fresh coriander.
