A refreshing salad combining the sweetness of pears, the tanginess of marinated artichokes, and the creaminess of Boerenkaas cheese, served with a zesty dressing.
80g Baby Salad Leaves
20g Wild Rocket Salad
150g Marinated Artichokes
100g Boerenkaas
2 Pears
15ml Lemon Juice
15ml Olive Oil
Dressing
60ml Mayonnaise
15ml Lemon Juice
Chili (amount to taste)
Zest of ½ Lemon
2.5ml Honey
Salt and Black Pepper for seasoning
Use a mandolin slicer and slice the pears very thinly. Drizzle with lemon juice to prevent them from going brown.
Combine all the ingredients for the dressing.
Assemble the salads on four serving plates by tossing the salad leaves, rocket, artichokes and pears together. Drizzle with a little olive oil and add black pepper (optional).
Top with the cheese shavings and serve with dollops of the dressing.
