Pear, Artichoke And Boerenkaas Salad

A refreshing salad combining the sweetness of pears, the tanginess of marinated artichokes, and the creaminess of Boerenkaas cheese, served with a zesty dressing.

  • 80g Baby Salad Leaves
  • 20g Wild Rocket Salad
  • 150g Marinated Artichokes
  • 100g Boerenkaas
  • 2 Pears
  • 15ml Lemon Juice
  • 15ml Olive Oil

Dressing

  • 60ml Mayonnaise
  • 15ml Lemon Juice
  • Chili (amount to taste)
  • Zest of ½ Lemon
  • 2.5ml Honey
  • Salt and Black Pepper for seasoning

  • Use a mandolin slicer and slice the pears very thinly. Drizzle with lemon juice to prevent them from going brown.
  • Combine all the ingredients for the dressing.
  • Assemble the salads on four serving plates by tossing the salad leaves, rocket, artichokes and pears together. Drizzle with a little olive oil and add black pepper (optional).
  • Top with the cheese shavings and serve with dollops of the dressing.
