Peanut Butter Nanaimo Bars

Delicious and indulgent peanut butter Nanaimo bars with layers of chocolate and peanuts.

Bottom Layer

  • 120g butter
  • 1 egg
  • 50ml castor sugar
  • 60ml cocoa
  • 150g Tennis biscuits
  • 60ml coconut
  • 60ml roasted peanuts

Middle Layer

  • 120g peanut butter
  • 650ml sifted icing sugar
  • 30ml milk
  • 5ml vanilla extract
  • 45g butter
  • Pinch of salt

Topping:

  • 120g dark chocolate
  • 30g butter
  • Crushed peanut brittle

  • Combine the butter, egg, caster sugar, and cocoa in a small saucepan and cook on low heat until it is smooth and slightly thick. Beat all the time and use low heat.
  • Add the crushed biscuits, coconut, and chopped peanuts and mix well.
  • Press this mixture into the bottom of a rectangular loose-bottomed pan (about 10 cm by 30 cm).
  • Place in the fridge to set.
  • For the middle layer: Combine all the ingredients and mix very well.
  • Spoon onto the bottom layer and smooth the top. Chill in the fridge.

For the topping

  • Melt together the butter and chocolate in the microwave on a low setting and spread on top of the middle layer. Sprinkle over the crushed peanut brittle and place in the fridge overnight to set.
  • Cut into slices.
