Delicious and indulgent peanut butter Nanaimo bars with layers of chocolate and peanuts.
Bottom Layer
120g butter
1 egg
50ml castor sugar
60ml cocoa
150g Tennis biscuits
60ml coconut
60ml roasted peanuts
Middle Layer
120g peanut butter
650ml sifted icing sugar
30ml milk
5ml vanilla extract
45g butter
Pinch of salt
Topping:
120g dark chocolate
30g butter
Crushed peanut brittle
Combine the butter, egg, caster sugar, and cocoa in a small saucepan and cook on low heat until it is smooth and slightly thick. Beat all the time and use low heat.
Add the crushed biscuits, coconut, and chopped peanuts and mix well.
Press this mixture into the bottom of a rectangular loose-bottomed pan (about 10 cm by 30 cm).
Place in the fridge to set.
For the middle layer: Combine all the ingredients and mix very well.
Spoon onto the bottom layer and smooth the top. Chill in the fridge.
For the topping
Melt together the butter and chocolate in the microwave on a low setting and spread on top of the middle layer. Sprinkle over the crushed peanut brittle and place in the fridge overnight to set.
Cut into slices.
