Lime, Almond And Blueberry Loaf Cake

Indulge in the delightful combination of zesty lime, crunchy almonds, and juicy blueberries with this scrumptious loaf cake.

  • 180g butter
  • 180g castor sugar
  • Zest of 2 limes
  • 3 eggs
  • 5ml vanilla extract
  • 100g self-raising flour
  • 2.5ml salt
  • 100g ground almonds
  • 30g chopped, roasted, and salted almonds
  • 50ml lime juice
  • 200g blueberries

Topping

  • 100g icing sugar
  • ±30ml lime juice
  • More blueberries for serving/garnish
  • Lemon/lime zest
  • Chopped roasted, salted almonds

  • Preheat the oven to 170°C. Grease and line a loaf tin with baking paper.
  • Cream together the butter and caster sugar, then add the lime zest.
  • Add the eggs one at a time, beating well after each addition.
  • Whisk together the self-raising flour and salt. Then add the ground almonds and chopped almonds.
  • Add the dry ingredients and lime juice to the creamed butter mixture, and mix gently to make the batter.
  • Add 150g blueberries to the batter. Bake for 15 minutes, then sprinkle the rest on top of the cake and return to the oven for another 15 minutes.
  • Gently cover the loaf with foil and bake for the last 20 minutes.
  • Cool and remove from the tin.

TO MAKE THE TOPPING

  • Combine the lime juice and sifted icing sugar, mixing well to achieve a drizzling consistency.
  • Decorate with more blueberries, lemon/lime zest, and chopped roasted almonds.
