These Lemon and Poppyseed Bliss Balls are delightful, offering a burst of citrusy flavor in every bite. Perfect for a quick energy boost or a healthy snack.
80g butter
75g cashew nuts
100g ground almonds
80ml honey
40g coconut flour
Zest of 2 lemons
15ml lemon juice
Vanilla
45ml poppy seeds
Few drops almond essence
Combine all the ingredients (except the poppyseeds) in a food processor and process until the mixture comes together like a dough.
Mix in the poppyseeds.
Roll the mixture into small balls (approximately 20 g each) and roll them in desiccated coconut.
Store the bliss balls in the fridge.
