These Lemon and Poppyseed Bliss Balls are delightful, offering a burst of citrusy flavor in every bite. Perfect for a quick energy boost or a healthy snack.

  • 80g butter
  • 75g cashew nuts
  • 100g ground almonds
  • 80ml honey
  • 40g coconut flour
  • Zest of 2 lemons
  • 15ml lemon juice
  • Vanilla
  • 45ml poppy seeds
  • Few drops almond essence

  • Combine all the ingredients (except the poppyseeds) in a food processor and process until the mixture comes together like a dough.
  • Mix in the poppyseeds.
  • Roll the mixture into small balls (approximately 20 g each) and roll them in desiccated coconut.
  • Store the bliss balls in the fridge.
