Hot Cross Bun Loaf Cake With Citrus Drizzle

Enjoy your hot cross buns in a loaf shape – toasted or fresh with lots of butter!! YUM!  That’s what dreams are made of!  This recipe makes 2 delicious loaves – one for today and one for tomorrow…

STARTER DOUGH

350 ml             lukewarm water

10 ml               instant yeast

15 ml               ground cinnamon

10 ml               mixed spice

10 ml               ground ginger

300 g               cake flour

FRUIT

100 g               mixed peel

100 g               sultanas

150 g               raisons

100 g               cranberries

250 ml             warm water

2 medium        eggs

60 g                 butter, melted

DOUGH

580 g               cake flour

10 ml               salt

60 g                 castor sugar

DRIZZLLE

100 g               sifted icing sugar

                        Zest from 1 orange or clementine

                        Juice from 1 orange or clementine

 

  • Combine all the dry ingredients for the starter dough together, mix well and add the lukewarm water.Mix well then cover well and leave in a warm place to double in size.
  • Combine all the dry fruit and stir in the warm water.  Leave to soak while the starter dough is developing.
  • Once ready – drain the water from the fruit and add the egg and melted butter to the fruit.Add this mixture to the starter dough and mix well
  • Sift together the cake flour, salt and castor sugar and add it to the starter dough mixture. Knead well to combine – you can use your electric stand mixer for this OR do this on a floured work surface.
  • Place the dough in an oiled bowl and cover very well.  Leave in a warm place to prove until doubled in size.
  • Divide the dough into two.
  • Make balls of dough and place in 2 well-greased loaf tins.  Cover lightly and allow to rise in a warm spot
  • Preheat the oven to 190°C before proving has finished
  • Bake the loaves for about 35 minutes until golden brown.Leave to cool on a cooling rack
  • Combine the ingredients for the drizzle and spoon over the loaves once cooled
