Grape, Avo & Pomegranate Salad

A delicious end-of-summer salad bursting with juicy grapes, creamy avo, and pops of pomegranate! The secret? A touch of chopped preserved lemon for the perfect balance of sweet, tangy, and fresh.

Serves 4-6

 

SALAD

2          packets rocket and some baby salad leaves

            handful of mint and basil

250 g   white seedless grapes, halved

2          avocadoes, peeled, pitted and diced

1          small red onion, thinly sliced

100 ml pomegranate pips

150 g   soft feta cheese, cubed

30 ml   chopped preserved lemon

DRESSING

60 ml   olive oil

60 ml   Verjuice (or use 45 ml white balsamic vinegar)

15 ml   lemon juice

15 ml   Dijon mustard

5 ml     grainy Dijon mustard

1          garlic clove, crushed

5 ml     dried oregano

            Salt and black pepper

5 ml     honey

 

  • Combine all the dressing ingredients and mix well
  • Mix the onion slices with a little of the dressing and toss. Drain after one minutes and the onion is ready to be used
  • Make a salad (on a large platter) with the salad ingredients and sprinkle over the dressing.
