Fudgy Macaroon Chocolate Bars

FUDGY MACAROON CHOCOLATE BARS
CHEWY, CHOCOLATEY and loaded with coconut– these bars are hard to beat!
SO EASY to bake and even better to eat 
(Makes ±24 bars)

 

FUDGY CHOCOLATE LAYER

120g   dark chocolate, chopped

250 g  butter

220 g  soft brown sugar

3          eggs, beaten

5 ml    vanilla

140 g  cake flour

30 ml cacao powder

1ml     salt

COCONUT LAYER

240 g  desiccated coconut (fine) (750ml)

1          tin condensed milk

5 ml    vanilla

2,5 ml almond extract

TOPPING

160g   chocolate chips, melted with 60 ml cream

40 g    chopped walnuts or pecan nuts

 

  • Preheat the oven to 180°C and grease and line a 28cmX20cm rectangular cake tin with baking paper
  • Melt the chocolate and butter in the microwave or small saucepan and cool then stir in the sugar and then the eggs and vanilla.
  • Sieve together the flour, cacao and salt and add to the chocolate mixture to make the batter.
  • Spoon half of the batter in the prepared cake tin and place in freezer to get firm.
  • Combine the coconut layer ingredients and spoon it carefully on the firm chocolate layer then top the coconut layer with the rest of the chocolate batter
  • Bake in the preheated oven for 23 minutes and cool completely.
  • Melt the chocolate and cream together and spread it over the baked cookies. Sprinkle over the chopped nuts and wait for the chocolate to set before cutting it into bars
