These Feta, Spinach, and Bacon Pies with Soured Cream Pastry are delightful savoury treats perfect for any occasion, whether it’s a brunch, picnic, or snack time indulgence. (Serves 6)

Crust

  • 240g flour
  • Salt
  • 250g soured cream
  • 230g butter
  • 5ml lemon juice

Filling

  • 200g spinach
  • 200g feta
  • 200g bacon (leave out for vegetarian option)
  • 1 egg
  • Nutmeg
  • Seasoning

  • Make pastry: Combine all pastry ingredients in a food processor and pulse until combined. Rest for 30 minutes. Combine filling ingredients and cool.
  • Roll out pastry and cut into 15x15cm squares. Brush edges with egg wash.
  • Spoon filling into the centre of each square. Bring the corners of the pastry together and gently pinch closed to form parcels.
  • Brush with egg wash, chill and bake for approximately 30 minutes at 190°C.
