Crispy Yoghurt Chicken Poke Bowls

MARINADE

60 ml   soy sauce

15 ml   toasted sesame oil

15 ml   honey

10 ml   grated fresh ginger

2 ml     chili flakes

CRISPY CHICKEN

400 ml panko breadcrumbs

60 ml   sesame seeds

3          chicken breast fillets, cut into strips

salt and freshly ground black pepper

150 ml cake flour, seasoned with 5 ml paprika, 2,5 ml salt, pepper, 2 ml chili flakes, 2,5 ml Chinese 5-spice (optional)

3          eggs

80 ml   double cream yoghurt

            Oil for shallow frying

SPICY  MAYO

100 ml good quality mayonnaise

100 ml double cream yoghurt

45 ml   Sriracha sauce

1          garlic clove, crushed

15 ml   lime juice and zest of 1 lime

5 ml     honey

TO SERVE

750 ml cooked brown rice

6          baby cucumbers, sliced

1          avocado, diced and seasoned

45 ml   pickled ginger

60 ml   edamame beans

3          spring onions, thinly sliced

toasted sesame seeds for sprinkling

 

  • TO MAKE THE MARINADE: Combine all the ingredients and sprinkle one third of the marinade over the chicken strips.  Marinate for 10 minutes.  Keep the rest to drizzle over the bowls just before serving.
  • TO MAKE THE CRISPY CHICKEN: Combine the panko breadcrumbs and sesame seeds in a bowl.
  • In another bowl, beat together the eggs and the FIRST CHOICE dairy snack
  • Season the chicken pieces and dip into the seasoned flour, then in the beaten egg mixture and lastly in the panko breadcrumb mixture. Place the crumbed chicken in the fridge for 30 minutes.
  • Heat the oil in a large frying pan on medium heat and fry the chicken pieces on both sides until golden brown and cooked (about 3 minutes on each side). Drain on paper towel.
  • TO MAKE THE SPICY MAYO: Combine all the ingredients
  • TO ASSEMBLE: Divide the rice between 4 bowls, top with cucumber slices, avocado, chicken, pickled ginger, edamame beans, spring onion and sprinkle over some toasted sesame seeds.
  • Drizzle over the left-over marinade and add a large dollop of the spicy mayo to each bowl.
