Citrus Eton Mess

A refreshingly light dessert that brings together zesty lemon, lime, and a sweet marmalade drizzle for a burst of citrusy goodness! 🍊🍋 Fluffy meringue, whipped cream, tangy curd and marmalade make each spoonful a little taste of sunshine. Perfectly messy, irresistibly fresh!

Serves 8

 

2          oranges, peeled and segmented or cut into bite size pieces

2          clementines, peeled and segmented or cut into bite size pieces

2          sweet grapefruits, peeled and segmented or cut into bite size pieces

            Small meringues, store bought or homemade

300 ml cream, whipped

60 ml   marmalade, mixed with a little water to make it slightly more runny

125 ml lemon and lime curd

            Icing sugar for dusting

            Citrus zest of choice

LEMON AND LIME CURD

50 ml               lime juice

100 ml             lemon juice

150 g               castor sugar

                        Zest of 1 lime

2                      eggs

2                      egg yolks

10 ml               cornflour

160 g               butter, cut into cubes

 

  • TO MAKE THE LEMON AND LIME CURD: Mix the cornflour with a little of the lemon juice then add all the ingredients in a small saucepan.
  • Heat on very low heat whilst stirring and just bring to the boil. Remove from the heat and strain the curd through a sieve into a clean bowl.
  • Cover with clingwrap and cool completely
  • TO ASSEMBLE: Spoon blobs of the whipping cream on a large platter and top with meringues.
  • Add the citrus segments and drizzle with the lemon and lime curd. Add some of the marmalade sauce and dust with icing sugar.
  • Finish off with crushed meringue and citrus zest
  • Alternatively you can assemble the dessert in small jars by layering the ingredients
