Chocolate Peanut Butter Brownies

Chocolate and peanut butter is a match made in heaven! Whether you’re a seasoned baker or just starting your journey in the kitchen, this recipe is easy to follow and guarantees a gooey, chocolatey reward in the end😋

BROWNIE

170 g   butter

200 g   soft brown sugar

80 ml   cream

100 g   dark chocolate (use 55% dark chocolate)

40 g     good quality cacao

5 ml     vanilla extract

2          eggs

120 g   cake flour

pinch of salt

5 ml     baking powder

100 g   chocolate, coarsely chopped OR use choc chips

120 g   peanut butter, softened

 

  • Preheat the oven to 180 °C and butter and line a 20 cm brownie dish with baking paper.
  • Place the butter, brown sugar, velvet, dark chocolate, cacao and vanilla extract in a small saucepan on low heat and stir until melted.
  • Remove from the heat, cool for about 10 minutes and then beat in the eggs.
  • Sift together the flour, salt and baking powder and mix it gently into the melted chocolate mixture. Add the chopped chocolate and then pour the batter into the greased pan.
  • Spoon the peanut butter over the brownie mixture and swirl through, using a sharp knife. Bake for about 20 minutes, then turn the heat down to 160°C for another 6 minutes until the brownie is almost set.
  • Cool a little and serve warm with ice cream OR cool completely (preferably overnight) and cut into squares. Store in an airtight container for up to a week

TIP – HOW TO KNOW WHEN IT IS READY: Bake until set around the edges but still fudgy in the centre – a skewer inserted in the centre should have some wet mixture on it.
