Chocolate, Banana & Pecan Nut Cookies

CHOCOLATE, BANANA & PECAN NUT COOKIES—crispy, chewy, and packed with flavour! 🍫 The perfect weekend spoil and oh-so-yummy

Makes about 30

100 g  butter
100 g  castor sugar
1          egg
140 g  flour
2.5 ml baking powder
20 g    cacao
pinch of salt
100 g  chocolate chips
1          small, ripe banana (mashed)
100 g  chopped pecan nuts
icing sugar (for rolling)

-Cream the butter and sugar together until light and fluffy. Mix in the egg.
-Sift together the flour, baking powder, cacao, and salt.
-Add the dry ingredients to the butter mixture and mix well to form a dough.
-Fold in the chocolate chips and mashed banana. Mix well.
-Chill the dough in the fridge for 1 hour.
-Roll into 15 g balls, then roll in the chopped pecans, pressing gently to stick.
-Place on a baking paper-lined tray and refrigerate for at least 30 minutes.
-Preheat the oven to 180°C.
-Roll cookies in icing sugar until well coated.
-Bake for 12 minutes. Let cool and enjoy!
