CHEATS CAPRESE PIZZA

BEST weekend spoil!  You only need a few ingredients and it will take less than 15 minutes to prep this delicious treat or light meal…YUM.  Who does not lOVE anything “CAPRESE”???

1 roll              puff pastry

1                      egg mixed with 30 ml milk (egg wash)

60 ml             basil pesto

6                      firm, ripe tomatoes, sliced and seasoned with salt and pepper

120 g              mozzarella balls (Bocconcini)

150 g              grated mozzarella

Vine tomatoes for garnish

Fresh basil for garnish

 

 

  • Preheat the oven to 200°C
  • Unroll the pastry on floured baking paper and roll out into a rectangle of about 30X40cm.Trim the edges if necessary.
  • Transfer the pastry (on the baking paper) to a large baking tray.
  • Score around the edges of the rectangle (about 2cm from the edges) with a sharp knife – but do not cut through the pastry.
  • Brush the edges with the egg wash
  • Use a sharp knife to poke holes in the centre area of the rectangle.
  • Spoon the pesto in the centre area and top with tomato slices.
  • Top with the bocconcini and lastly the grated mozzarella cheese.
  • Bake for about 20 minutes until the pastry is crisp and the topping is golden brown. Top with the vine tomatoes and some fresh basil  – serve warm.
