Serves 4-6

800g  gnocchi (homemade or store bought)
200 g  strong cheddar cheese, grated

150 g  baby tomatoes or sliced tomato for baking/garnish

parsley, chopped (and other herbs of choice)

60 g   butter
BOLOGNAISE SAUCE
30 ml olive oil
1        onion, thinly sliced
1        carrot, peeled, grated
3        garlic cloves, crushed
15 ml chopped rosemary
30 ml tomato paste
45 ml Worcester sauce
500g  beef mince
800 g chopped, tinned tomatoes

10 ml brown sugar

salt and black pepper

  • Preheat the oven to 200°C. You can reduce the heat if necessary.
  • TO MAKE THE MEAT SAUCE: Heat the oil in a large saucepan and add the onion, carrot, garlic and rosemary. Season then cook for about 10 minutes, stirring occasionally until tender.
  • Stir in the tomato paste and Worcester sauce, then add the mince. Cook for about 5 minutes, breaking up the meat so that there are no large pieces. Add some seasoning
  • Add the tomatoes and sugar then cook on low heat until the liquid is reduced by half. Taste to adjust the seasoning.
  • TO ASSEMBLE:Cook the gnocchi in a large pot with salted water until it is just cooked then drain well.
  • Heat the butter in a frying pan and cook the gnocchi in the butter until golden brown. Work gently to prevent it from breaking.
  • Add the meat to the baking dish then top with the golden gnocchi, baby tomatoes and the cheese.
  • Bake until golden brown. Sprinkle over the herbs and serve immediately.
