WHITE CHOCOLATE AND COCONUT CHEESECAKE – WITH SALTED CARAMEL TOPPING

I created this cheesecake recipe for De Villiers Chocolate (I used their COCONUT BLONDE). The texture is SO good – exactly as I always dream about how cheesecakes should be! Follow the baking instructions – it works! The flavour is amazing – subtle coconut, not too sweet and of course the salty flavour of the caramel just to put the cherry on top! This is a recipe to keep! If you don’t like coconut – substitute the coconut chocolate with any other white chocolate of choice. I LOVED working with De Villiers Chocolate – its so easy to melt and work with!! Very impressive!

TIP: Bake until set around the edges but still fudgy in the centre – a skewer inserted in the centre should have some wet mixture on it. The trick with brownies is the correct baking time! Once you get the perfect baking time for your oven – make sure you write it down on the recipe. NEVER overbake your brownies!
