CHEESY PHYLLO CIGARS WITH SPICY HONEY

Make your favourite “snacky” phyllo cigars using EXTRA VIRGIN OLIVE OIL (EVOO) brushed between the layers of pastry😋
If you have a olive oil spray – even better (and quicker). I LOVE using the @willowcreekoliveestate olive oil spray – SO easy and convenient and the bottles can be refilled
You can use a variety of fillings for these cigars but I find this combo of spinach, caramelised onion and feta a winner. Served with the chili honey it is the PERFECT Festive season snack or starter
It can be prepped well in advance OR frozen (uncooked)

This will be on my table this Christmas!
When asked by Hilary Biller of the Sunday Times to create a Summer Christmas cake – this is what I thought my family will love! You can do all the prep the day before and assembly your masterpiece on the day and leave it in the fridge for up to 3 hours before serving.
We all love cherries and their season is so short – I thought to make the best of these little beauties and let them shine on my Christmas table this year
