

Feta, Spinach and bacon pies with soured cream pastry
CRUST
240 g flour
Salt
250 g cream cheese
230 g butter
5 ml lemon juice
FILLING
200 g spinach
200 g feta
200 g bacon, cooked until crisp and chopped
1 egg
Nutmeg
Seasoning
METHOD
Make pastry(Combine all ingredients in food processor and pulse until combined, rest 30 minute. Combine filling ingredients and cool
Roll out pastry and cut into 15X15cm squares
Brush edges with egg wash
Spoon filling in centre – bring the corners of the pastry together and gently pinch closed to form parcells
Brush with egg wash, chill and bake for ±30 minutes at 190C
