STICKY PEAR & GINGER CRUMBLE

Baking time:                25 minutes

(Serves 8)

 

CRUMBLE

180 g   cake flour

60 g     rolled oats

50 g     NATURA DARK DEMERARA SUGAR

100 g   salted butter

50 g     pecan nuts, roughly chopped

PEAR FILLING

6          pears, peeled, cored and cut into quarters

80 g     salted butter

100 g   NATURA LIGHT MUSCOVADO SUGAR

100 g   preserved ginger, chopped

5 ml     cinnamon

2,5 ml  ground ginger

METHOD:

  • Preheat oven to 180°C and grease a pie dish or use a skillet
  • TO MAKE THE CRUMBLE: Combine the flour, oats, 50 g NATURA DARK DEMERARA SUGAR and the 100 g butter. Use your fingertips to rub the butter into the dry ingredients to make a crumble.  Add the nuts
  • TO CARAMELISE THE PEARS: Melt the 80 g butter in a frying pan/skillet and add the 100 g NATURA LIGHT MUSCOVADO SUGAR, cinnamon and ground ginger as well as the preserved ginger.  Stir to make a sauce
  • Add the pears and gently stir until they are covered in the sauce. Cook for a few minutes to cook and lightly caramelise the pears
  • If using a skillet: Sprinkle over the crumble and bake for ± 25 minutes
  • If using a pie dish: spoon the pears and sauce in a greased pie dish, sprinkle over the crumble and bake in the oven for ±25 minutes till golden brown and cooked.
  • Serve with ice cream or cream
