



DATE, OATS AND ALMOND ENERGY BALLS
(Makes ±30)
100 g toasted, chopped almonds
140 g oats
210 g pitted, chopped medjool dates
90 g honey OR maple syrup
80 g peanut butter
pinch of salt
pinch of ground cinnamon
250 ml desiccated coconut for rolling
METHOD:
- Place all the ingredients (except the coconut) in a food processor and pulse until it comes together
- Roll the mixture into large teaspoon-sized balls (±25 g each) and roll into coconut
- Store in an airtight container
