




BROWN BUTTER LEMON BARS
CRUST
180 g butter
150 g castor sugar
5 ml vanilla
375 ml flour
pinch of salt
FILLING:
200 g castor sugar
45 ml flour, sifted
pinch of salt
3 eggs
15 ml lemon zest
125 ml lemon juice
icing sugar for dusting
METHOD:
- Preheat oven to 180°C and grease and line a rectangular dish (20 cm) with baking paper
- TO MAKE THE CRUST: Cook butter – stirringconstantly, until it turns a medium brown. Pour the butter into a bowl and cool for 5 minutes
- Add the sugar, vanilla and salt to the butter and whisk until smooth.Fold in the flour and mix to make the dough
- Press the dough evenly into the baking dish.Bake for about 20 minutes until a pale golden brown
- TO MAKE THE FILLING: Sift together the flour, sugar and salt.Whisk in the eggs, zest and the lemon juice until smooth
- Reduce the oven temp to 160°C and slowly pour the filling over the hot crust.Carefully return the pan to the oven and bake for about 22 minutes
- Cool for 1 hour then lift the baking paper onto a cutting bord and cut into squares
- Dust with icing sugar and decorate with lemon slices
