ROASTED CAULIFLOWER, FETA AND HERB FRITTERS

(Serves 4)

1          medium head of cauliflower, divided into small florets

30 ml   olive oil

            pinch of cayenne pepper

2,5 ml  paprika

3          eggs, beaten

60 ml   finely chopped spring onion

100 g   self-raising flour

15 ml   chopped mint

15 ml   chopped coriander

160 g   feta, crumbled

            sunflower OR olive oil for frying

METHOD:

  • Preheat the oven to 200°C
  • Mix the cauliflower florets with the olive oil , cayenne pepper, paprika and some salt and place into a roasting tray. Roast in the oven for about 20 minutes until lightly charred.Cool
  • Combine all the ingredients to make the batter
  • Heat some oil in a large non-stick frying pan and drop tablespoons of batter into the pan.
  • Cook for about 3-4 minutes on each side until the fritters are golden and crisp
  • Drain on paper towel and serve warm with homemade tomato and jalapeno chilli jam and more fresh coriander
