



PEANUT BUTTER NANAIMO BARS
(makes 16 slices)
BOTTOM LAYER
120 g butter
1 egg, beaten
50 ml castor sugar
60 ml cacao
150 g crushed tennis biscuits/graham crackers
60 ml coconut
60 ml chopped and toasted peanuts
MIDDLE LAYER
120 g smooth peanut butter
650 ml sieved icing sugar
30 ml milk
5 ml vanilla
45 g melted butter
pinch of salt
TOPPING
120 g dark chocolate (6%)
30 g butter
crushed peanut brittle/praline to sprinkle on top
METHOD:
- Combine the butter, egg, castor sugar and cacao in a small saucepan and cook on low heat until it is smooth and slightly thick. Beat all the time and use low heat
- Add the crushed biscuits, coconut and chopped peanuts and mix well
- Press this mixture into the bottom of a rectangular loose-bottomed pan (about 10 cm by 30 cm).
- Place in the fridge to set
- For the middle payer: Combine all the ingredients and mix very well.
- Spoon onto the bottom layer and smooth the top.Chill in fridge
- For the topping: Melt together the butter and chocolate in the microwave on a low setting and spread on top of the middle layer.Sprinkle over the crushed peanut brittle and place in fridge overnight to set
- Cut into slices
