KIWI AND CHIA POPSICLES

(Makes about 10)

A guilt-free and healthy snack for hot weather! You can use berries or peaches instead of the kiwi. Honey is used as sweetener instead of sugar. You can replace the honey with maple syrup to make Vegan popsicles

125 ml             chia seeds

500 ml             coconut or almond milk
40 ml               honey
4                      kiwi’s, peeled and sliced thinly

METHOD:

  • Soak the chia seeds in the coconut milk and honey for at least an hour (until thick). Stir well.
  • Fill the popsicle moulds with layers of the kiwi and chia mixture, insert sticks and place in freezer for at least 4 hours or overnight.
  • Unmould and enjoy on a hot day
