RASPBERRY AND HONEY SOFT SERVE

(Serves 4)

300 g   frozen raspberries

60 ml   PEELS honey

1          egg white

120 g   fresh raspberries for serving

            Chopped mint for serving

METHOD:

  • Place the frozen raspberries, honey and egg white in a food processor and process until light and fluffy. This may take a few minutes
  • Work fast and spoon the soft serve into a piping bag fitted with a plain or star nozzle and pipe into 4 serving glasses.
  • Garnish with fresh raspberries and mint.
